I made some muffins the other day. I thought they were pretty good. Matt thought they were really good. He said to me,
"I like these better than your cookies."
Goodness gracious. Matt loves my oatmeal chocolate chip cookies!! Sometimes they are the glue that holds our marriage together. Ha. Not really. Well... Maybe our love is based on cookies. There's a funny story about cookies from when we first started dating. But that's for another time.
Here's the recipe for my chocolate chip oatmeal banana muffins. It's based on my Grandma Kimber's banana bread recipe, but with a few modifications. Because I like oatmeal and chocolate chips.

4 bananas
1 C shortening
1/2 C sugar
1-1/2 C brown sugar
4 eggs
4 C flour
2 tsp baking soda
1 tsp salt
1-1/2 C old fashioned Quaker oats (the big fat, slow cooking kind)
1 C mini chocolate chips
Mash bananas. Cream in sugars and shortening. Add eggs. Add flour, soda and salt. Stir in oats and chocolate chips. Bake at 250 degrees for 30-40 minutes until the toothpick comes out clean.
